Koto Satori 8 inch Professional Chef's Knife - 67 Layers Damascus Blade, Japanese VG-10 Stainless Steel Chef Knife With Ergonomic Handle, Full Tang, Premium Packaging

I've owned and used this knife coming up on a year pretty soon. It's a fantastic knife and even more so considering what I paid for it. It comes to you very sharp and if you have some polishing stones you can put a dangerously sharp edge on it. It's got a thin and light blade, very well balanced and nice feeling handle (it's a design copied straight from the Wustof Icon), and the wooden saya is a nice addition considering many $100-$300 Japanese knives don't include this. I sharpened (more of a touch-up polish really) for only the second time this week and honestly it didn't really "need" it. VG10 steel is truly a wonderful metal...edge like carbon steel, but low maintenance like a stainless and wears very slowly. I would love to purchase 2 more of these to give as gifts for my family. Sadly it's been unavailable for a long time and even though Satori still has a web site, I can't find them anywhere else.

Knife came RAZOR sharp, the inside of the box is a very nice velvet red and displays very beautifully. I immediately did a cut test with it and was not disappointed. Shaved paper like it was part of the air around it. The blade itself is very beautiful as damascus steel tends to be, and the handle is very comfortable, i can now get those razor thin cuts that i have been wanting to with this knife. 10/10 would recommend.

Super sharp. Had it a year and I use it daily. I hone it on a steel after every use and you can shave with it. It’s a laser etched Damascus so don’t think it’s really Damascus but it holds an edge, has great balance and feels great in the hand. 7” Santoku

Love this knife and took really good care of it - handwash, dry and store after each use. Until one time I went out of town and somehow my MIL managed to do this (see pic). Dont know how but disappointed that this can happen to a knife i thought was quite durable.

Great knife. Sharp as heck, nice weight, and looks amazing. It feels very sturdy and good in my hand. It cut through a whole pineapple like it was nothing!! I'm loving cooking with this!

Knife is excellent. However, the protective Teakwood sheath was split and chipped. The chipped off part of the sheath was not in the package.

The knife came well packaged, it even has a wooden sheath with it! The blade is sharp and the knife feels solid.

material quality and craftsmanship are excellent. the only thing I didn't like about this knife is the poor grip on the handle .
