Question 1

I have had my cinnamon for about a week now. i was disappointed in the grind.  it is grainy and does not mix into my coffee.  what can i do?

I just purchased this cinnamon and I don't see a problem with the grind. It's just as finely ground as those at my local store. I do agree with some of the commenters. I guess you could sift the powder to separate the finer grains, but I have no proplems mixing this into my teas or morning meals.

Question 2

Seller: the image looks like cassia cinnamon sticks, not ceylon. can you verify that this product is ceylon cinnamon, and not cassia cinnamon?

It seems to go back to the fact that the picture on Amazon is Ceylon, the the picture of the product I received is cassia.  I am trying to get an answer myself.  Cassia (fake) cinnamon is dangerous in quantity, while real (Cassia) is very healthy.  I can't afford to make this mistake.  I will say that it tastes a bit sweet, unlike the cinnamon I got at the supermarket.

How much coumarin does it have? I want to take 2 teaspoons a day and don’t want to get sick

To answer more specifically...it naturally has 0.004% couramin. Couramin is known to cause liver and kidney failure, so I imagine no organic food source wants to label this naturally occurring & harmful compound. Coumarin is a compound found naturally in several plant species. In rodents, coumarin is known to cause kidney, liver and lung damage. 
“Cassia cinnamon, but not Ceylon, is a very rich source of coumarin. Cassia contains approximately 1% coumarin, while Ceylon contains only 0.004%, or 250 times less.”

Is there certificate of analysis available for this product?  A few reviews suggest that this might not be Ceylon, but rather Cassia.

I'm no chemist, I'm barely a cook. I wouldn't know a certificate of analysis if I tripped on it. But as it's flavor is much lighter, it's aroma much more fragrant and it's flavor much sweeter, I can say that it is not the cinnamon I was used to. As what I have read indicates that the common is Cassia, and these are the qualities of Ceylon, as far as I am concerned it is Ceylon. And I have become quite fond of it! Especially in my steel cut oatmeal where I no longer add sugar but enjoy this sweet flavor. It has also been quite pleasant in baked goods.
