A nice knife
Just got this and a Tojiro knife. I thought just having 2 good ones is all I would need and think it is.I thought it would be a smallish knife but is actually rather large. The handle is large compared to the knife, but I have to say it cuts like a dream, it could be sharper and will be but for now it does a great job. It has a nice build quality, maybe not a good as the Tojiro but then it is quite a bit cheaper.The blade is quite slim for the size of the knife but that does make it easier to cut through things.For the price I think it is a great knife that will hopefully provide years of wear and tear.Now to just make sure I never leave it in water and always clean it after use :)

A knife for a lifetime?...
What's the difference between a chef and a cook, I'm not always sure? However I can more easily tell the difference between a cook's knife and a 'proper' chef's knife and this I.O. Shen 6" Chef's Knife feels like it qualifies. It comes simply packaged, there's no fancy velvet lined box, just enough to keep it protected but once you unpack it the quality is obvious. It's got a nice weight and a good balance and the handle feels very solid and securely attached to the blade. The blade itself has a good rigidity, making it really useful for cutting hard foods like root vegetables or squash that can deflect a springier blade.As you'd expect it's got a fantastically sharp, clean edge and so it also copes with soft foods like ripe tomatoes with ease. You can also slice things into wafer thin slices, although it takes a steady hand, making it useful for things like sushi or cold meats. All together it's a really excellent quality knife and feels like it should last years. I haven't had to sharpen mine yet but it looks straightforward, there's a simple edge to maintain with no fancy angles or serrations and any good sharpener should do it. The price is obviously high but if it lasts and continues to be as much of a pleasure to use as it is new then you'll get your money's worth. Pricey but impressive.

Superb knife
This I.O.Shen 3028 six-inch chef knife has cut through and chopped everything like it was cutting through butter. The length of the knife is 29 cm. The blade is 16.5 cm and the handle is 12.5 cm, as you lift the knife out of its packaging you can tell immediately you have a quality knife for preparing your meals in the kitchen. It is well-balanced, and the handle is Decorated with an inlay pattern. The handle is weighted, which makes it nice to hold and easy to work with. This knife is extremely sharp allowing you to slice and chop to perfection without any effort. I have washed and dried it by hand as the instructions say to do. This is personally one of the sharpest knife’s that I have ever used, and because of this it makes preparing meals easier and quicker. Brilliant knife and I would happily recommend. There are some products that are just RIGHT, and this is one of them.Not only does this knife look “the business”, the instant you pick up, the weight, the feel and especially the balance tells you it’s something special. When I first took it out of the package I was immediately impressed, I just wanted to hold it and admire it.The tastefully decorated handle is unusually thick, but it fits the hand perfectly. The blade is just the right shape and size and, oh boy, is it sharp, it’s like preparing food with a giant scalpel, take great care.This knife is exquisite, since I’ve had it I just keep looking for excuses to use it. It’s so nice when something utilitarian is also beautiful. It speaks volumes of the craftsmen who manufactured it.After use, wash it by hand in warm soapy water, don’t spoil it by putting it in a dishwasher.I’m sure there are many even better knives available but, at the price, this one represents exceptional value.

Great knife, sharp, good balance and looks good too.
Wow, reading the reviews I expected this knife to be sharp, but it is sharp and then some more. Since we started eating healthily around 4 months ago, I use all fresh ingredients, instead of it being a chore I am enjoying it. It makes all the difference when you have good knives, it really changes the way you cook. This knife is extremely sharp and lovely to hold, preparing stir fries is effortless, it shreds through cabbage like a dream. Once the colder weather comes in making soup will be so much quicker, it was always the prep that put me off. My partner is scared to use it, mind you he is very accident prone so probably best. You are actually safer using a sharp knife when preparing food as there is less chance of it slipping. As well as being lovely to use it looks amazing, the design on the handle isn’t painted on, it is metal. This knife will last for many years. I have no hesitation recommending this knife.

Described by a restaurant owner as 'Outstanding'
A knife this expensive and suggested quality is outside of my usual kitchen equipment, so I thought I would ask two people I know, both of whom run restaurants/commercial kitchens to give an opinions.In summary, they were both similar. Both were were aware of the brand, but had never used them. Both commented on the 'out-of-box' sharpness, something having nearly cut myself I can agree with. They thought the knife well balanced and were not surprised at the price.I found it very sharp and accurate, much better than the french brand we currently have, although that's 20 years old so probably not a fair comparison. It went through onions like butter managing wafer thin slices. In short, as my friend described it: outstanding.
