The handle is a textured plastic which gives a good solid grip
I bought this a gift for my dad to replace an ancient scalloped knife that had started to arch along the blade edge through many years of sharpening.The first thing to mention is the size. At 12inches and a hefty height o the blade you're going to want to be confident with kitchen knives before using (or the person you're buying it for does). The second thing is that this knife comes SHARP from the factory. You can take it out and use straight away without having to refine the edge in any way. The handle is a textured plastic which gives a good solid grip.In use the knife performs very well. A large joint of meat can easily be sliced thinly, the length allowing a single cut to be made, rather than having to use a sawing motion, with can pull the meat apart. Obviously the sharpness helps here, so you'll need to keep that fine edge. It also worked very well as a bread knife, slicing through hard crusty loaves and fluffy white bread with ease.Its worth noting that the size of the blade means that for fiddly jobs, such as getting into the nooks and crannies of a roast chicken, this knife wont be as useful as a smaller Sabatier type knife. Not a criticism, as its obviously not designed for that job, but worth noting.

Brilliant but scary bread knife!
This is a scary knife: big, fairly weighty and extremely sharp. It is quite long with a blade length of 29 cm and remarkably wide at 4 cm. I bought it as a carving knife as recommended by several reviewers who rated it very high. However, I found it messy when cutting a joint of pork and it was hopeless at cutting through crackling. It actually is described as a edge slicing knife and not a carving knife and this is really a better description. It is the wider width than standard that allows such straight cutting, while the sharpness of the blade makes such a difference. This difference in description (slicing knife) is important as while it might be great for carving more solid textured meat, for a general purpose carving knife a serrated edged knife would be better. Indeed, the Victorinox carving knife with serrated edge proved to be a great Christmas present for my son-in-law and perhaps I should have bought the same. That knife not only cut through all manner of meats, but it did so with great accuracy and produced very thin and uniform slices as required. However, for fine textured meat the Granton slicing knife will be splendid and I find it a brilliant bread knife giving a really straight cut with no crumbs.

Carve with ease
Great length blade light to handle and easy to get clean.The Gratin blade ( with indents) makes carving Brisket and smoked Turkey breast a dream.Recommend for all especially those new to the art.

Good quality slicing knife
Great for slicing meat thin also excellent for slicing fresh crusty bread in fact its better for this than my wustoff bread knife costing double the price. Good grip and easy to use good edge

Effective carving knife
I bought this knife to carve meat - particularly large joints of meat. I have found it easy to sharpen and very effective - mine can cut roast pork with the crackling on though I normally take that off and use scissors. It is a large knife but this makes it easy to use - at least for me. I find the handle easy to hold and it provides a stable and precise grip.

It's a big old thing. Works perfectly. Nice grip and it slices lamb joints like a hot knife through butter.

Buy it
It is a long thin blade and flexable it also has a rounded tip which means it is good for slicing ham although it is not technically a carving knife it will carve meat nicely though some may find it a bit long you can carve thin slices which is more difficult with a traditional carving knife.I also find it good for slicing sides of smoked salmon where you really need to cut thin slices. Its reasonably priced now that its been reduced by 34% and you would be hard pushed to find something better for the price.
