Is the ram expandable, or if you purchase 8gb ram you are stuck with 8gb ram?

Not expandable. But I can tell you, I got the 8gb of the M1 chip and it's still very fast. It works differently than a desktop. I spoke to an Apple rep before purchasing and we both agreed the 8gb was fine for the graphic design and digital illustrations that I do. No need for the added cost. You may want to call a rep as well, as everyone uses a computer differently. So I got the 8Gb with the M2 chip as well. Don't anticipate any problems.

1.could i have it with 16 gb ram and 256 gb storage? 2.is it true that the 256 gb disk is slower than the 512 gb disk?

Yes to both of your questions. This MacMini can be specced with 16GB of RAM and 256GB of storage. However, the 256GB configuration is slower than 512GB because it only uses one SSD chip instead of two so the memory bandwidth is half that of the 512GB. In simpler terms: fewer storage chips means slower Mac.

How is the sound? Do you have any speaker recommendations?

I actually have 2 of these computers. One is connected to a Yamaha amplifier and a Sony TV with older Bose and Wharfdale speakers for a great surround system via HDMI, the 2nd via Bluetooth and Edifier R2000DB speakers, which work just great as well (not quite as well as the 5.1 surround sound of cause). Great "workhorses"

Does this require signature in person at the door for delivery or will they leave it at doorstep contactlessly? Thanks.

It doesn't require a signature. But be careful that it isn't left someplace where it could be stolen or be subject to inclement weather like rain or extreme cold. I have a special storage room near my front door with a big weatherproof and vandal-proof sign: DELIVERIES. Whenever the door to the storage room is opened, a loud bell rings inside to give me heads up on a delivery.
