Great for getting all the meat off
I use this mostly for getting the meat off of rotisserie chickens I buy and it's made the task so much easier. Instead of using a harder knife that can't get into all the curved areas, I can now get around all those awkwardly shaped areas thanks to the flexibility of this knife. This helps to reduce the amount of meat wasted. It cuts well, though once the meat is off the bones I wouldn't choose this knife for slicing or chopping it.While the handle is easy to hold and definitely slip resistant I'm not a fan of the texture, but I can see how it would help a lot with grip. The handle seems oddly large compared to the blade, maybe that's also for grip but it stands out to me.Overall it's a very useful knife that cuts well at a very reasonable price.

Geiser Boning knife
I absolutely love this knife! It is super sharp and gets every job done, from cutting up chickens, trimming fat off meats, chopping up seasoning, etc…..I use it for everything! Have tried many expensive knives over the years, but this one is THE BEST!!!! Would give 10 stars if I could!

Not expensive looking but sharp and functional.
The handle looks cheap in a way, plastic of course, but it does have a great grip. The blade is sharp and quality. Total function though this is a great knife for carving fat off beef muscle in precision.

great knife!
I'm not a butcher, but I do like to BBQ on some weekends. That requires me to have a sharp knife so that I can prep my meat quickly and easily. This comes really sharp and I was able to trim off fat and silverskin with no issues. The handle has a rubberized feel to it, as I'm sure it's needed for professional butchers to slice through meat all day. The knife is comfortable to hold and easy to use. This is something I'll most likely use when cutting up rotisserie chicken!

super sharp
this is really a sharp boning knife. Made in germany, the handle is nothing special but it does get the job done. It's not a knife I use all the time, simply because I'm not always Boning, but when I am Boning--this is the one.
