The Madrona (Arbutus menziesii) is a beautiful red barked tree that loves growing along rocky shorelines in twisting, turning shapes. It stands out from the background of our coniferous forests brightly and reminds us that we are in the Northwest! To make this salt, we use our natural, mineral rich sea salt and cold smoke it over fallen Madrona branches for more than 14 hrs. It gives off a delicious caramel, meaty aroma and brings a smoky, savory taste to any dish.
