For me personally, Hot Sheet is cooking attitude. That’s self-efficacy, confidence, how I see myself as a basic cook who uses fresh ingredients. I suspect it’s food skills over cooking skills since sheet cooking and cleaning are mechanically simple.I have limitations, having skipped cooking skills growing up which is correlated to food skills. My range hood is insufficient for the entire stove; counter space is limited; we’re 3-generations of 9 individuals living together who don’t eat at the same time or the same food.The sheet pan approach reconciles certain issues and boosts attitude. Use the oven, sidestepping my stove limitations. Monitor one or two things only. When I only have one half sheet pan to monitor or maybe two quarter sheets, I can do it.We use basics: beans, lentils, eggs, rice, potatoes, sweet potatoes, onions, red onions, pasta, tortillas, chicken, shrimp, tofu, olives, scallions, tomatoes, dough, small fruits, lime, various peppers, eggplant, sausage, herbs, seeds, mushroom, carrots and zucchini.I’m finding the oven when used with sheet pans is a space saver in the kitchen and leftovers are in good condition. Ovens are good at airflow and browning. Our fiber intake is improving. Hot Sheet is teaching me to make our diet healthier and more varied with minimalism I hadn’t known.
