I like to sharpen all of my restaurant's knives before use, but orders started coming in before I had the time and it was 97% as sharp as my personal finish. No further sharpening necessary.The fact that it's also reasonably cheap enough to replace after one of my employees does something stupid with it is also a huge plus.This seller in particular was also very fast in shipping. I bought this to use to remove fat and silverskin from meat prior to smoking or grilling and loved it. It is now my go to knife for so much more. Be careful though it's sharp enough to shave with!
