Recommend from the States “Meat Churches Holy Cow” was my first choice for my Jubilee Brisket…. formed a great bark/crust, flavour was spot on. Definitely use again

Too Much Pepper
Texas or not, the pepper is too heavy. The background flavour is nice but the pepper is overwhelming and not very well ground. I may sieve it out and grind up a smaller amount of pepper.
