The title is very misleading!
As someone who would eventually like my own bakery I thought this would be a good starting point. I was wrong. The book has all of 11 pages dedicated on the business side of owning a bakery, the other 110 pages are mainly recipes and kitchen design. The recipes may come in handy hence the two stars, but as a business tool, it was useless.

Excellent Information
This slim volume will answer many questions. Certainly, a person unfamiliar with commercial baking will require more skills, but this will get you started, and it will tell you a lot of the questions you will need to ask if you want to start a bakery business.
