Sharp
My first “real” chef’s knife that wasn’t a part of cheap set. I bought this knife after a YouTube review by Will Stelter. It has held up well after about a month of daily use. Comfortable in the hand and super sharp.

Steel warped!!
Ok, this is a nice knife. Like the reviewers say it fits the hand nicely. Feels blade heavy slightly. However, the knife was warped. And badly. It was hard to show it in a pic longwise so i decided to put it on the counter to show the warp. But even that didnt show that its warped not just sided to side but twisted diagonally.I chooped one onion, and wanted to check the blade under the light and thats when i noticed it.Honestly I really wanted to like this knife, but definitely feels like it was designed right, alot of thought went into it, but manufactured cheaply in china. Im returning it today and gona stop messing around with chinese knives, i really had my hopes up that as well reviewed as this knife was, it arrived so warped.UPDATE: its now 1/21/25. I have just now received my first email response from Hedley and Bennett. Its a basic apology and to contact amazon about it. Honestly, buy from a company that is actually present.

Chopped after a few uses
Disappointed with the knife. Out the box it’s extremely sharp and a nice hand hold. I was recommended this knife from other chefs so I purchased. I’ve had it two weeks and the tip is chipped. I’m very easy on my knives washed and immediately put it back in case and the tip somehow chipped. I’ve only cut cooked steak with it. Maybe used 8 times. 3 stars for price with damage

Very sturdy and sharp
Super sharp right out of the box and has stayed that way!

The knife is very narrow.
The reason not to leave 5 stars is the width of the knife, as a chef knife the Size is Perfect but the width. Less than 2" can not be put to proper use.

The current favorite in the house.
This is the one we grab - all our other knives get ignored. It's a total joy to use.We have other knives in the same price range, and a couple fall into the classification of excellent. But if you are spending a lot on a knife, you want a few things: easy to use for a long time, natural feel/balance so that you have full cutting dexterity, and an edge that will hold and not go dull for a long time. Ideally, you just want it to perform what you need to without having to think about the knife itself. This knife is like that. Great weight, balance, and the edge is dreamy - cuts are perfect.Note that it's sharpened at a slightly rare angle, any pro sharpening craftsman will match it anyway, but I recommend not using any standard tools on this and never a pull through sharpener! That angle is part of the reason it cuts like a dream. It's worth it to have a professional sharpen it.Finally, I wasn't sure about the handle color, but now I love it. Probably because I enjoy the knife so much I associate it together, but it's now my favorite.
