Top Cut By New Star Foodservice 1029239 Swedish Sandvik 14C28N Steel Bread Knife, 8"

I have only one week of use with this knife. the sharpness out of the box cuts hairs. it is very light weight both in the handle and the blade. the blade is not as wide as the direct competitor the victorinox 8 in chef knife. the handles are similar but not the same. I have one of each in 8 inch chef knife. the top cut has a very thin razor blade near the edge while the victorinox is basically a flat thin piece of steel with a more durable quick edge applied only on the 2mm edge of the blade with a very abrupt convex shape. I can not comment on the durability or if it is dishwasher safe. at this price point I think this is THE best light weight 8in chef knife.

This is a pretty amazing little knife. The quality and the description both on amazon and on the box are simply outstanding. Not only does it come properly sharpened but they also tell you the angle of the bevel (16*/side), the steel type, its hardness and even the type of plastic used on the handle! That's how it should be done, in my opinion.

My hand hurt so bad whenever I had to cut up veggies-I dreaded it. Then I bought these knives. Now I can cut veggies easy peasy! I’d buy these knives again in a heart beat and have been recommending them to my friends and family. Dare I say I even enjoy cooking more than ever!

It is extremely sharp and love the way it feels in my hand. Some paring knives too big but this is just right.

I am a high volume kitchen employee. I’ve had my knifes less than one month and already noticed a significant decrease on the edge from the manufacture. I will retract this review after they are completely Dialand I resharpen myself

This knife is unbelievably sharp and solid. A great price for an everyday kitchen tool, and just the shorter size I needed.
