When I am stringing these together with an external 5v power supply do I also need to connect (string) the power wires down the line?

If you're asking if these can be daisy-chained, the answer is yes, but only to a point. 3 strings (150 lights) can easily be connected together and powered by a single 5v power supply at one end. If you want more than that, you might need to wire in additional power lines to compensate for voltage drop (look up power injection, there is a lot of information available online).

Are there IP68 waterproof connectors available to keep waterproofing longer than one string?

Understand that I only have to apply power ever 3 strings or so, but when stringing them together do I need to connect the power between strings?

For 5V strings if you want good full-power whites you really need to inject power every two strings (100 lights) .  Even when doing that the last few lights of each group of 100 will be a little off in color unless you tie power between strings.  I use wall transformer switching supplies and they don't seem to mind being tied together.  I think the wire resistance is enough to keep them from fighting each other (oscillating).  With 12V strings you can have more lights between injection points (maybe 150) but they use about twice the power.  I measured 31 watts for 100 12V pixels and 17.5 watts for 5V pixels.  Both 100% white with similar brightness.

What gauge wire is used?

It is thin, maybe 18ga? But it does have power injection leads on each end, so I just piped in 5v between each strand with some 14ga spkr wire and 10 strands work great on my tree. Beware, they smell awful, it's been 45 days and I can still smell the epoxy.
