Wow, the sharpest blade I’ve met yet! Definitely for experienced carvers. I bought this knife specifically for trimming brisket and it’s perfect. It’s not too long of a knife, which is good, because of it’s sharpness; easy to handle & grip. The grip is made of a sturdy finished wood. I’m very pleased.

Excellent meat trimming, carving knife.
This knife feels well made, high quality and it is just flexable enough for fine trimming but sturdy for large jobs. It's tip is razor sharp. Also the knife is well balanced and just right for my meat cutting tasks. It is also beautiful and a pleasure to process beef and fish. Lovely addition to my kitchen tools.

Holds a great edge
I was apprehensive about buying a cheap knife, but this holds an edge better than some of my $100 knives. It’s a little short but it isn’t noticeable once you get used to using it. Fantastic knife especially for the price.

Incredibly sharp
This is a beautiful piece of cutlery, well made and comfortable to use. The edge that came on this knife is sharper than anything I have ever used. It is described as a boning knife and it worked great to bone out a pork shoulder roast. It was also so sharp that I was able to shave off the fat cap before cooking. The only ding I have is that the point on it was so fine and sharp, that putting it in the wooden knife rack put a bit of a bur on the point.
