Q: what size hose is needed

It has a thread fitting that I would suggest is a 1/4 bsp but it comes with a fitting and that takes a standard 5mm internal hose. Its also supplied with a 3" bit of hose and a 10 way splitter

Q: what size hose is needed to fit the 10 ports on the manifold and can you turn each one off and on.

You cannot turn each one off , it’s a pain, I bought a large air ring for my pond and and ran it directly!
