Q: How do you make the lines appear on both sides?

Cookies always have a flat side, these do too. The lines appear on the bottom when you take them out of the pan. I do not see how one could score them on the top of the batter to have both sides marked, or even why you would want to do that.

Q: How big are the individual mandalins?

The individual mold measure 3 inches but in baking they shrink to about 2 3/4 inches. I hope this helps. I love this pan.

Q: what are the dimensions of the individual cups?

They are larger than what I used in a pastry class in Paris. They are 3” tall and 2” at the widest part of the shell, tapering down to 1” at the bottom. Same size as the William-Sonoma pan. Cakes come out beautifully, however.

Q: Is this pan dishwasher safe, or will it corrode like aluminum baking sheets if you put it in the dishwasher?

I don't know. It seems sturdy enough. I don't put my pans in the dishwasher. Don't want them to discolor and that could be the case with this pan.
