Great, clean berries
I am really happy with my order! The berries are very clean, no random debris has been found so far. The buckets themselves are pretty sturdy and I ordered gamma lids to make it more easy to access. I’ll definitely be ordering all of my berries from here! Having the option to have such a heavy product shipped on, Amazon makes me happy, I don’t have to wait forever and ever and pay so much money to get really great quality berries.

Soft White Wheat Berries for Milling or Cooking
This "emergency food storage bucket" of soft white wheat berries can be milled into pastry flour or cooked into softened grains for eating as is or as part of a larger recipe. The Palouse Brand is fantastic -- I've been buying their grains for years because I mill my own flour -- and I love that the farm is family-owned, growing non-GMO grains. These soft white wheat berries mill into a delicious, consistent pastry flour good for lower-gluten bakery items such as cookies and muffins. It's too low in protein to make good bread without the addition of vital wheat gluten. As a bread baker, I find soft wheat berries less useful than hard white and hard red, but they do have their place in a baker's kitchen.These soft white wheat berries are pale in color, and they mill into a flour with a color no more dramatic than unbleached store-bought flour. Maybe with a bit more caramel color. Since the home-milling process keeps the bran and germ, flour made from these results in higher nutrition and fiber. You will have to add 1/4 cup more home-milled flour per 1 cup called for in your recipe to get the same consistency, although in some cases you can get away with less. I baked chocolate chip cookies with freshly-milled flour from these berries using the exact measurements in the recipe, and it worked, although the dough was more sticky and the cookies more reliant on the sugars than flour for structure. I think this is because of the fluffier texture, so weight-based cooking shouldn't need adjustments.Although the storage tub is somewhat difficult to open and close, it provides a dark, reusable environment to keep the wheat berries dry and contained. Even after I removed the plastic strip around the lid, I couldn't lift it and had to use a special tool meant for opening 5-gallon paint tubs, and I had to re-seal it using a rubber mallet. It would be great if the company included such a tool. If you truly expect to use these wheat berries as emergency good, you might want to purchase those tools and keep them handy. You don't want to find yourself unable to get to your food. Despite that inconvenience, I love that I don't have to dump the berries into separate containers for storage.This huge, 25-pound tub is great for avid home-millers like myself as well as an emergency food source as long as you have access to a cooking method. Although I find soft wheat berries less useful than hard white wheat berries, they are probably better for cooking. The Palouse Brand is one of the best grain sources out there, and even if their grains are not organic, I appreciate their attention toward giving customers full knowledge of the growing conditions of their non-GMO crops.-- Debbie Lee Wesselmann

Excellent Quality Soft White Wheat Berries
This is a 25 LB pail of soft white wheat berries – the whole grain. Soft white wheat is a type of wheat grain – there are many types.Soft white wheat has a lower protein and gluten content (but still has gluten). It used primarily for pastry or cake flour – products that require a tender crumb. “White” refers to the color of the bran. It has a somewhat sweeter taste than the nuttier/stronger flavor of hard red wheat. They are both nutritious.I like to cook it and eat it for breakfast as a hot cereal, as a grain side dish & as a base for warm or cold vegetable dishes. I cook my wheat in my Instant Pot but you can soak it overnight & then cook on the stove – it will take at least 1 hour, maybe more. You can make a big batch ahead & refrigerate or freeze it for quick meals. I always have a large container in my fridge for quick breakfasts. We just add almond milk or milk & microwave it for 1 minute to reheat. You can add cinnamon, honey, sugar, etc. - whatever you like. Or go savory & put a soft cooked egg on top, etc. Be creative.My Instant Pot has a “Multigrain” button. I use that at the “More” setting & high pressure. I use 3 cups of water for 1 cup of wheat, 1 tsp salt (you can easily double this for a bigger batch). I often add a cinnamon stick. Let it natural release. You should plan about 2 or more hours from start to finish. Then you just drain the wheat in a colander if there is excess liquid. I do NOT rinse – don’t want to lose the delicious flavor & it is not sticky anyway. I save the drained water for adding to soup and sauce – it has the same effect as cooked pasta water – makes a soup or sauce more “creamy”, wheaty & have more body.
