Inspirational and Amazing
Well, I can't say anything less than great about the book because every page was useful. I read and reread the book several times to appreciate all of it since you get so much information without any thats garbage which is what most books contain when they are as thick as this one. The recipes I already had a chance to try to make were a success. This is only my 8th book in the culinary field so I am no expert but if my word means anything- i say get this book and learn A LOT!

Great book!
This is a great book because it is much more than a cook book. It has great stories from famous chefs about their experiences in other countries, their culture and their cuisine.

For class
This was for a class, but it really has some great stories, recipes and tips. I learned a lot, not just from the class, but from the book as well.

This was a great book - very informative and interesting. Even though it was for a class, I really enjoyed reading it and it did not make me feel like I was doing school work!

Being a chef for over 30 years I would of expected something a little more cutting edge that what I have and read in this book,

the perfect holiday gift
What a wonderful book! Crisp and full of flavor, like the first bite of a fall apple. Beautifully written with tons of information, yet very approachable--I can't wait to cook my way through it. I'm a big fan of all the Page/Dornenburg books, and this one is the best yet! I'm giving it to all my friends for Christmas.
