Paderno World Cuisine 2.325 Inch 10-Flute Tin Brioche Mold

I found this made of a heavy enough gauge steel to be sturdy and durable. When seasoned in my oven, it released brioche quite easily, provided I followed someone's advice of using a butter coating, (actually gee) rather than a cooking spray. The flaw, and it could be serious, has been mentioned in other reviews, is the sharp edge of the tin. I've encountered this problem in many other products over the years and found the solution to be simple. I either use a file or a wire brush on a motor driven grinding wheel to solve the problem. Since the flutes on the brioche tin would be onerous to file smooth, I passed the edge of the brioche tin over the wire brush of the rotating wheel and it made it quite smooth and risk free. The result is it's an excellent choice for the task involved. I would have given it 5 stars were it not for the edge.

these are nice little pans. bake well and clean up easily. i like these for baking pull apart breads and cant wait to try some cakes in them.
