Q: I have bags of wood chips that are cherry. Old trees. Can I use those or are pellets the way to use this efficiently?

The pellets won't flame up after you blow out the initial lighting of the pellets I think the wood chips would flame up and burn like fire wood. However, I think if you soaked the wood chips in water over night it would be worth the try. As long as the wood chips are packed in you might get a slow smoke.

You don't need an e-book. The instructions are on the box. Fill it with pellets. Stand it up with the open end facing up. Start the open end on fire with a butane or propane torch. Let the pellets burn like a candle for about 5 minutes. Then carefully put it in your grill over low flame or coals. If you adjust the air to your grill properly you will get hours of smoke from this thing. Practice makes perfect.

Q: Will this work in a natural gas grill not a smoker

It should work fine in a gas grill.

Q: Does the ash stay in the tube, or fall through onto the surface below the grill grate?

If you do not jar the tube, the ash will stay in place. I assume you are asking for a gas grill and you don't want to deal with the ash.. If that is the case, I would leave it in place until the grill is cool and remove it carefully. Jarring the tube will cause the ash to sprinkle through the holes
