yes they do. I had the same situation with a larger mouth jar. They stretched very nicely,

Q: Are these safe for water bath canning?

I would not, but ONLY because you are bathing these jars in hot water with glass, metal and acrylic all heating and cooling at different times. The metal might crack the glass long before the acrylic got soft enough to fail.

Q: Is this available in a smaller size (i.e. for a spice jar)? Do you have a 1.75" gasket?
