Great product to give that authentic Chorizo flavor to regular ground sausage.I am still working on the ratio to suit my taste but I am thinking about 5 or 6 pounds of sausage to 1 package of seasoning.

OK,, all the other reviews are spot on. Born in Phoenix I was spoiled with the authenticity of my grandmothers cooking. Her and her sisters could put on a feast of the best mexican food. I hadn't paid enough attention to how she made it but I have spent many years after she passed trying to emulate her cooking. This mix nailed it perfectly and with some experimenting you can wake your taste buds up to the perfect Chorizo. I will share it with you.1 lb of 93% ground beef1lb of lean ground pork1 tube of Jimmy Dean HOT sausage2 packages of Tampico Chorizo mix.1/2 cup of water1/2 cup or less of vinegarmix thourghly in metal bowl (5 min in mixer)cover tightly with clear wrap making sure its sealed completely and let it ferment in the fridge for 24 to 48 hours.. ENJOY

Best chorizo mix I've found without making it from scratch. I grew up in Tucson eating chorizo frequently. I've eaten many different versions and varieties. Simply mix the 3 oz. package with 2 lbs. of lean ground beef and 1/4 cup of Red Wine vinegar. Allow it to marinate over night. Fry it up then add, pre-fried cubes of potatoes (optional) and eggs (kind of optional but you'll probably want to at least add eggs). Serve with rice, refried beans and tortillas (I prefer flour with chorizo). Recipe can be doubled, tripled, etc.. Enjoy!
