High Quality; Easy and Effective to use
From the handle to the curvature, flexibility and sharpness of the blade, this is a great knife. The 5 and one-half flexible blade is easy to maneuver and use in tight spaces and for trimming. I have used mine for boning and trimming chicken thighs, breaking down chickens for the barbeque, and for breaking down and trimming pork spareribs. They keep their edge well, and also sharpen well after use. I use this knife together with a 6 inch, stiff blade Victorinox knife. My butcher friend recommended these knives, and he was right.
