just like the ones I had in my childhood
I searched high and low for this item in the states.This ash soda (Jian powder) is very commonly used in China for making Dim Sum Baozi/Mantoe (Steamed Bread/stuffed bread) using sour dough.It not only neutralize the sour taste from sour dough, but also make the steamed bread more flavourful, just like the ones I had in my childhood.Be careful not adding too much though.

Great to neutralize acidic taste.
Used to neutralize sour taste of my home-brewed wine, and it worked great! It's more effective than baking soda, and does not alter the flavor much.
