Can I use it to grate vegetables instead of cheese?

Maybe...depending on the vegetable. There is only one grater ring and it makes cheese that's too thick for my liking (think coarse grate on a four sided grater). It probably would work for some vegetables...you'd have to cut them to make them fit. Give it a shot!
