This product has only three ingredients - cashews, peanut oil, and sea salt. I think you should research polyphenol oxidase (PPO) a bit more. It is a naturally occurring enzynme in most fruits and vegetables that results in browning of the surface. For instance, if you slice up and apple, it will gradually turn darker in just a 15-30 minutes. That's what PPO does. If you eat fruits and vegetables, you eats lots of PPO. Most food research is about inhibiting the action of PPO, not adding it.

I checked and there were 14 listed! Included Brazil, Cambodia, Ghana, Ivory Coast, Togo, Vietnam, India, Nigeria and the list goes on. Hope this helps.
