I have found THE pan I will use for the rest of my life.
The title says it all. I use this pan at least 5 times a week. It is a core component to my kitchen arsenal.I have both signature series(this one) and the level just below it and what a difference the signature series makes.I bought this pan for my mother as a christmas present, but have also used the signature series calphalon pan with lid for years now.I love it so much I own two and will never buy another brand. Whether it's cooking a heavy breakfast or a complicated dinner, it doesn't matter what I throw in the pan, food cooks perfectly, evenly, and without sticking.The tight fitting lid just opens up the culinary possibilities making it more than just a skillet. I regularly use to it make chicken nachos. The lid on the skillet sealing just right allows my onions tomatoes, and green peppers to sauté with my chicken without letting those precious juices escape!If I had any complaints, they are minor and well worth tolerating.1. The pan is heavy, so holding in one hand while plating for 4, does get really heavy. I have to set it down to finish plating my dishes.2. The lid handle does begin to get hot to the touch if it has been on during cooking for a while. I've just learned to quick tap the handle before I grab, to see if I need a pot holder in my hand to use before I lift the lid.I've bought a lot of different pans over the years, looking for a pan that can stand up to the daily abuse I put it through. In my 20+ years of cooking, this is the only one.

You can cook just about anything in this skillet and it won't stick!

Every time we use this pan it cooks to perfection. It evenly heats and is easy to clean. Great quality for your money.

Great Pan. Highly Recommend!
I've had this pan for nine months now, and use it on a daily basis as my main frying pan, so it's already seen enough use to compare to my previous non-stick pans.this pan is much heavier than the run of the mill non-stick pan and can be put on the heat, dry, and will not warp. I do have some small scratches in the surface, but i think that is due to my daughter's treatment of the pan in the sink, and not in normal, non-stick use. Although the manufacturer claims metal can be used, i don't so and cant speak to that.overall, i enjoy using this pan. it's heavy, and remains non-stick after nine months of hard use. it does require the same kind of care that all non-stick pans do, but is much more user friendly for the cook.

Expensive; it will be long lasting
It is one of Calphlon's largest fry/saute pans, so it is very heavy. Good idea to assemble your recipe next to pan, because when it is full of a 1.5 lbs+ of food it is extremely heavy. You need upper body strength to lift it up onto a wall oven rack, and out carefully when it is hot, when you would want to finish a fratata. Caution and care to not cut or try to separate meats, for example in pan or use shape metal tools, etc because it does show "fine scratches" on the surface of the interior. Yet, I've used it several times per week for past 7-8 months, and works fine. We have a very high BTU central burner on our cooktop, therefore even the outside edges of the pan cook items quickly...like pan seared chicken breasts with olive oil and herbs, etc. Plus, rarely need to soak the pan, so clean-up is easy. Have owned and used Calphlon cookware it seems for over 30 years. Still have some of my originals like stock pots and sauce pans on good shape, although those are not nonstick.
