Q: How long will the stone stay hot?

You've probably got a good 15-20 minutes of real heat after you take it out of the oven if you don't use a Sterno in the burner underneath. The Sterno keeps it hot much longer, BUT either keep the flame on the Sterno well-controlled or move it around so it doesn't overheat the stone. We had our flame up too high for too long in the same place, apparently, which caused our stone to crack the first time we used it. It's still usable, but I'm bitter about the cracks.

Q: Can this be used on a gas stovetop?

No you must use the gel burner oil You have to put the stone in the over for about an hour to get it ready for cooking .I'm not sure you are aware of that .then take it out of the over and light the burners .using a gas stove could crack the stone

Q: Is there a replacement granite (stone type?) top that will not break?

There are currently no replacements that are not stone.

Q: What are dimensions of the actual stone, and can the rack go in the oven?

The rack does go into the oven to heat up and then to the table where the sterno will keep it warm - 14 1/2" X W 7 1/2" X H 1. Hope this helps!
