Q: Can the paddle be removed before baking?

Yes BUT: Exactly 20 minutes into the final rise the machine does a punch down (aka knock down) for several seconds to remove excess "air" generated by the yeast. This is the last time the paddle is needed to work the dough ball. Once the knock down is done remove the paddle. The down side of this machine is the poor documentation. There is no info provided for the event timings on any of the bread cycles and the knock down event isn't even mentioned - but it does happen.

Q: Can Keto Bread be made in this?

It starts with kneading with flour and yeast, and then, rest, repeat knead and rest. If Keto Bread has yeast as rising agent, it should work.

Q: Ingredients dispenser doesn’t not work for me. Do i need to select some specific setting? I put raisins and tutti-frutti.

You need to make sure that the machine is plugged in before you add raisins or nuts to the dispenser. If you plug in the machine after you add the contents to the dispenser, the dispenser does not record that it has contents in it and does not open. The instructions do say plug in machine then add contents to dispenser.
