Q: Do I need two cranks for each side ? Or just one per side?

Depends on whether you want to lift both sides. I use only one on north side of greenhouse, keep both front/back doors open and ventilation is fine. I also have a vent fan on back end. This way cooler air from lower roll up is drawn in as back fan vent allows heat escape. Works great for my poly 24x12 greenhouse.

Q: What supports the rolled plastic on the other end from the crank end? What keeps it from drooping or dropping down?

We use 3/4" EMT conduit and connect it together with EMT couplings which keep the rolled up plastic in place.

Q: Is this left side right side interchangeable or do you have left side cranks and right side cranks?

They are interchangeable. You can use this on either side.

Q: Will this work on a canvas building

It probably will, but it doesn't have a gear that will keep it from rolling back down if the roll of canvas is too heavy. I have a plastic film over my hoop house and it stays in the raised position nicely because the plastic doesn't weigh very much. These work great.
