Terrific Cookbook!
Just made Smoky Lentils & Sausage, Pasta Bolognese and Chick'n Tetrazzini Pasta, all excellent, all with clear directions, on pages that are nicely and attractively laid out. I truly appreciated that in most recipes, the author offers under a separate column, "Plant Protein Options," several ways to add protein to the dish from meat alternatives to minimally or unprocessed plant protein. This is a terrific cookbook that's taking a top spot on my cookbook shelf.
