My first santoku
The primary reason I purchased this knife was for cutting chicken breasts into cutlets. The ol' chef's knife just wasn't "cutting it". Erm, okay...I've learned a few things with this knife, and there is a bit of a learning curve for someone who has never used one before. The first thing is that I can really make some fine slices with this thing. It works well for the intended purpose, but what I really like it for is mincing garlic. Man, does this knife make that task easier.I use this knife for most of my mincing these days.Part of my problem is that I have used a chef's knife so much over the years that the Wusthoff I own feels like an extension of my arm. I can do a lot of stuff with a small chef knife, and I can do it quickly. I still prefer dicing most vegetables with the chef's knife. In fact, I would say that my chef's knife is still my workhorse knife. I can do just about anything with it.There are just some tasks that a santoku does better. Like mincing. Did I mention that I love mincing with this thing?Now I do have one piece of buyer's remorse with this.With a chef's knife, I prefer a smaller knife because it's more nimble and easier to control. I figured that with this knife, I would also prefer a smaller knife. However, I have quickly learned that I should have purchased a larger size.This is a great knife, but I do not feel it is in the "sweet spot" as far as size goes. That's not going to knock off any points, but it should be something potential buyers should consider. The worst part about that, though, is that it only needs about one inch to be perfect.Oh well. I suppose I'll buy another knife one day. It's just unfortunate that these have tripled in price over the last three years.

Great grip and cutting
Love the size and feel of the handle of this knife. Although it is a short blade (5") it works great even for larger vegetables like cabbage.

Amazing knife
Amazing sharp knife cuts through about anything with ease and is easy to maintain and keep up.

Metal was discolored
Great knife. However, the metal was discolored and had a sort of matte finish in some areas. Normally I wouldn't care but, I paid $150.00 for this knife. I didn't make the return/replacement deadline so, my fault. Just look at this knife closely when it arrives. Buyer beware.Well, I submitted this review and received no response so, I'm dropping my rating.

Beware
Beware of this knife - broke in two 2 years after purchase while being used to peel garlic. Contacted the company rep and told they had never seen this before and it must be my fault and it would not be replaced under warranty. I loved this knife but not for only 2 years of use. (Note this is the pre-2020 branding but the knife is the same)

Bought for my wife, she couldn't be happier with it!
Too long, didn't read version: If you have (or are buying for) someone with smaller hands, this knife is absolutely hands-down fantastic, and you - or they - will love it and thank you for it regularly. :)I was researching for a Christmas gift for my wife in 2021, and I got the idea that she might like another santoku knife. She got a 7 inch knife several years ago from my sisters several years ago and loves it... but I wanted to do some research and try to understand more about these knives and the variety of versions out there.In my research, I read in several places that 5 inch santoku knives were popular among people with smaller hands. (Like my wife). That narrowed it down, so I started looking at that size, and found several high-quality ones here on Amazon. I won't bore you with the details, but I decided to go with this version of the Wustoff Santoku for various reasons.Best. Decision. Ever.My wife loves this knife - she reaches for it constantly, only going for our professional knife set or the 7 inch Santoku for specific things.Her words: "This knife fits my hand like it was made just for me. It's so easy to maneuver that it feels effortless, and my hands don't get tired at all when I use it!"Two things to keep in mind - there is NO sheath for this knife, so you'll have to buy some. Easy to find and cheap, so that's not a real problem.Second thing is related to the first - this knife is SHARP. Crazy-sharp. You are NOT going to want to put this thing in a drawer or leave it out WITHOUT a sheath.

We use this knife several times a day and find it a good weight and a nice balance when using. Very pleased

Expensive, but worth it for edge retention.
I've had this for nearly 6 months now, and still haven't felt the need to use a stone to keep the edge. Just honed on a steel each use, and it keeps a great edge.Comfy, small size ideal for smaller hands. I would personally have a slightly larger knife, but bought for my wife who prefers a smaller blade so it's perfect for her.

TOP- Messer, aber nix für Angeber
Wer mit Damast-Stahl-Klinge und Griff aus tropischem Tralala-Holz und Fertigung in Samuraitradition protzen muß, sollte was anderes suchen. Wer aber ein fantastisch scharfes und schärfehaltiges Qualitätsmesser sucht, der kriegt es hier!! Winziger Kritikpunkt: zum ab und zu bei jedem Messer erforderlichen Nachschleifen könnte eigentlich angegeben werden, ob mit 15° oder 20°-Winkel. Ich mach's mit 15° und das ist seit drei Monaten auch absolut ok.

teuer, aber seinen Preis durchaus wert
Habe das Messer und aus gleicher Serie das längere Kochmesser schon seit einigen Wochen im regen Gebrauch und bin überaus begeistert.Das Suntoku Messer fühlt sich sehr schwer, aber gut ausbalanciert und vor Allem sehr fertig an. Schnippeln macht jetzt noch mehr Spaß..Nach den ersten Eindrücken bleibt es auch recht lange scharf und muss nur hier und da mal abgezogen werden.. Klare Kaufempfehlung

Tolles Messer
Ich mag die Messer von Wüsthoff. Das Santoku zeichnet sich durch seine gute Verwendbarkeit zum Schneiden über große Flächen aus. ch schneide damit gern größere Mengen Kräuter. Aber auch für Fleisch und alles Mögliche andere eignet es sich ausgezeichnet.

Exactly what I was expecting from this great brand. My only regret is that I should have picked a longer knife. Love it though!
