Great knife for RETAIL Produce.
I have had this knife for 3 years. There seems to be confusion in some of the reviews as to the purpose of this 6 inch green knife. This knife is NOT for kitchen use, such as using on a cutting board. This knife should be used by Professional Retail Produce people to trim greens and other Produce. The knife is meant to be used by holding the knife in one hand and the Produce in the other and cutting away from you or toward you like a paring knife. (whichever method you prefer). You should buy a good quality sheathe and sharpen the knife when needed. This is a great knife for people who cut Produce in a sales floor fashion.

Great knife
This is the second time I used this knife and so happy I got it. I enjoyed cutting my peas that were micro greens and they worked perfectly. I used them to cut these red clovers and can’t wait to use it on more of my sprouts

Excellent starter knives
I've purchased several different brands of knives over the years, including Victorinox and older Chicago Cutlery. I have purchased the 8" chef, 3" paring, and 10" bread knives from this Mercer Culinary range.These are great kitchen knives for home use.This is the basic product line from Mercer: sharp knives with durable edges designed for basic professional use. Not high-end knives, but well-balanced designs and good steel, taking a decent edge and holding it longer than other knives in this price range.If you go up in price, you can get steel that will hold a sharper edge longer, but those knives will be marginally better. These are good enough to slice quickly and slice tender foods without damaging them. With regular sharpening they will do everything you need for years.

Perfect
My hands become unexpectedly disabled. One if the most frustrating things to learn to compensate for was cutting up tons of vegetables as I make hibachi on a regular basis. Not to mention the money saved if you choice to cut them yourself. I did some research and this knife popped up as a good knife for the price. Totally understatement. The knife thinness makes any tremors less likely to cook yourself, the grip handle is comfortable for my hands and I would assume for hands with arthritis, and lastly it just cuts with no force at all. I do not know its long term durability but given the price and how well it works it would not have to work long to make it a worthwhile purchase.

Great work knife
I work in the produce department at a grocery store and I use this knife daily. It is very comfortable in my hand, and keeps a sharp edge for a good while before it needs sharpening. It can tackle everything from apples to cabbage with ease. I'm very happy with the purchase, and have purchased additional knives to welcome new members to my team.

Was on the fence but glad I bought it!
I was on the fence about buying this knife, thinking it looked possibly cheap, but over priced. I own expensive, good quality sharp knives for cooking so I know the worth of the right tool. I'm glad I tried this out. I absolutely love the handle. I also can attest to the durability of the finish of the blade. I accidentally left some plant matter on the blade for a few days in high humidity and temperature. There is no stain or rust. I clean by hand, so I can't speak to the dishwasher ability. All in all, a good tool for cutting crops.

Absolutely the best value in knives !
First off, it's kind of lame that Amazon lumps all the reviews from different styles in this brand into one list, but in this case, I'd give all of my Mercer Cullinary knives a perfect 5 star rating anyway.I know their are cheaper knives, but those are just going to be garbage. And on the other end of the scale, you can pay 5 to 10 X's as much for a knife, and it had better be a good knife for that price !But if you just want a really good, very sharp knife for a very good price, look no further !I now own 3 Mercer Cullinary knives and they are all fantastic 🙂My 8" narrow fillet knife is so sharp, it's scary ! If you get one of these, get it with the sheath like I should have.My 10" wide wavy blade bread knife, it the sharpest bread knife I've ever experienced !And my 8" Chef knife (with the green and black handle 😉) is just a beauty to behold, and again, rediculous sharp !I'm totally sold on Mercer Cullinary knives 🙂

Sharp is a reality with this knife.
My husband grows sprouts, and this knife was the best thing he's ever tried! You won't be disappointed if you are using it for cutting sprouts...probably works well in a lot of other situations.

I like the grip and feel of the knife
I have a good quality high carbon steel chef knife. My latest Which magazine issue highlighted this knife as sharp and stayed sharp. Being a boning knife the blade is considerably narrower and slightly shorter than my chef knife and therefore can be put to a different use for carving in meat and vegetables where the chef knife does not fit due to its size . It is made from high carbon steel, the handle is plastic and of good size. I had it now for a couple of days. Indeed it is sharp and ergonomic. For the price it cannot be faulted

Brilliant addition
This is one of 4 new knifes that I have added to my bbq knife set.Quality of product is brilliant and cuts without you having to put a lot of pressure behind it.This is 1 of 4 Mercer Culinary knifes I have purchased and they are all the same

worth the buy
Razer sharp! Excellent for fishing box. Nice and cheap. Fillets fish easily.
