very high quality fillet knife
What a classy old school fillet knife! Unlike most fillet knives, the steel is very hard with excellent edge retention and it is stiffer than most, like a deboning knife...would do both chores equally well i think.

Quality Fillet Knife
Very sharp, held its edge very well the blade. Is very flexible & strong about 8 inches with 4 inch handel. Works well, cleaned 30 pounds of fish and 44 pounds of eye of round for jerky, and have not had to sharpen it yet.

this is definitely not the quality of old henry this is new henry cheap lazy quality control.
handles loose already the blade is weak, i had to re-hone it as the edge was off centre an not even.

Uncle Henry's Filleting Knives
This is a great product in function and appeal! The only detracting matter is that the handles are no longer stag but could care less to have a fine product as good as the old versions! I bought these for gifts and will buy more!
