How long are the cutting blades?

The blades measure 6 inches from the tips to the pivot screw. The handles add another 6 inches, for a total length of 12 inches.

Is the spring strong enough to open the blades, when the blade becomes coated with sap?

I'm not sure about sap. But, these are some of the best clippers we have ever bought. They are strong, great grip, sharp and easy to use. I would say as long as you keep the blades clean they will work well.
