Is this headset noise cancelling?

Not in the traditional sense. If you turn it up really loud then you probably couldn't hear anything else but yeah, not noise cancelling I'm afraid.

Are the ear muffs swappable? I don't like the dark purple but don't know if you can change them by buying swappable colours

Yes they are swappable, only issue you'll have is that they are a nightmare to put on due to the corner designs at the bottom I believe.

Can you remove the microphone?

You can remove the microphone but microphone is not flexible but it's a very good mic nonetheless
