Would you recommend these for recording educational YouTube videos?

Yes! Of course it helps to know your recording environment and how you are going to use them. I record YouTube videos from approx 1 meter from them and found they disperse the light nicely. Again it all depends on your setup and requirements but these will happily get you going.

How long does it take to set these lights up and is it difficult to do?

You can set those lights in no time! First of all they are light and easy to carry. The height is adjustable and easy to set. And because of the inbuilt battery no cables all over the place.

Can i use it with power adapter instead of battery ?

No, it only works from battery, the usb input is only for charging. Once the battery is exhausted you will have to recharge it before you can use it again.
