Fantastic study on elite chefs in NYC and San Fran. Leschziner explores the hierarchies in fine dining kitchens, culinary creativity, and how culture influences chefs and their decisions. Very fascinating read and a great book to read after/before Gary Alan Fine's "Kitchens".
