Not as good as imported Spanish chorizo, but an excellent compromise for the price
We use chorizo for paella and for a lentil-chorizo soup. For that purpose, the perfect chorizo would be imported from Spain, and would cost considerably more. This chorizo is not perfect, but it's a very reasonable compromise for the price. It is slightly greasier than Spanish chorizo, but its flavor, texture, and seasoning are good.

Great flavor, tough sausage
You'll definitely want to remove the casing for any purpose--it's like plastic. Product very tough even when shaved, so not great for charcuterie. Best for parboiling and crumbling into recipes. Wonderful spanish style cantimpalo flavor keeps it to four stars, even with flaws.
