The Best Cake Flour out of all I tried! Must Buy!
I don't know what the technical difference would be besides it being much finer than others, but this is truly Amazing flour!! I've been trying to make cupcakes and cakes that stand out from normal bakery quality. I have had extremely interesting results. I baked the same recipe but with three different cake flour, I used swan's, silk, and bob's. Let me tell you the results were truly incredible! The swan's was very heavy and dense, the silk was very different in that it was amazing and fluffy, but the most outstanding cupcake was with bob's! Bob's flour let the flavor of the coca come through with fluffy moist clean tasting cupcakes. Really amazing to me that I could tell the differences between the three different flour's! Won't use anything else when baking but Bob's! Also a foot note viva organic cocoa is another amazing product!! do yourself a favor and look it up!

Buy. Buy. Buy. This is the best cake flour to come along in a long, long time. I am 65 yrs old and I can tell you I have used many brands of flours over the years and I know you've reached the point where you've almost stopped baking because the flours today produce weird textures that lack the tenderness and fineness of yesteryears. Everyone is complaining about not being able to produce baked goods with the textures like their mothers were able to achieve with ordinary supermarket flour. Well, this flour is as close as I have ever come to moms. I made biscuits with this flour and they were so tender, soft and moist. Then I made a simple yellow cake and it too was very soft and tender. Give this flour a try and I think it might be just the jolt needed to resuscitate your baking bug.

great flour for cakes and pastries!
best flour for making light cakes, cupcakes and even cookies. i will be keeping this in my pantry and using it in place of regular flour for my baking that requires a lighter texture. bob's red mill products do not disappoint!
