BEST KITCHEN KNIFE I HAVE EVER USED!
I have the Kasumi 10-inch, a Wusthof 6-inch, and a Henckels 10-inch. Just bought this from a store to replace one that got thrown out accidentally and I am still in a state of disbelief. This is the best knife I have ever used in the kitchen. It cuts like it is sharper than the $200 Kasumi or Henkels. This is only a 8.5-inch blade but it is narrower than the 10-inchers. I made a huge pot of Tabouleh yesterday in half the time it normally takes, mainly thanks to this knife. It cuts through hard and soft veggies easily, and better than the Damascus steel knives. I did not think I would find any knife better than the Kasumi and Henckels chef knives I have, but here it is. BTW, i sharpen all my own knives and maintain them in condition good enough to shave with.

Scary sharp steal
Just unboxed and stared at it for a while. Beautiful knife. Cant believe I only paid $60. I have only had it less than 24 hrs and only used once butterflying chicken breasts. Sharper than any knife made in Germany I have bought. Chicken breast almost split in fear. Feels really nice in my size 8 hands. Nimble, light and well balanced. Near imperceptible misalignment between one bolster and scale (-1 star). Others have smooth union. This knife is an absolute steal for the money. Won't by another German knife.Making excuses just to use it. Wife rolling eyes at me using it to quarter apples for kid's snack.Would highly recommend it to anyone stepping into the Japanese kitchen knife market. However, this knife is not as hardy as comparable german knives. The edge is very unforgiving to mishandling.

Great for professional use.
Tojiro's DP line is highly recommended by working chefs and cooks. They take and hold an incredible edge and represent wonderful value for the money. The "fit and finish" of these knives is probably 6 or 7 out of 10, though I have yet to recieve one with a blemish, some of the manufacturing leaves a bit to be desired. This makes a wonderful fillet or carving knife though. Highly recommended. You really can't go wrong with these knives. For anyone wondering they are a stainless clad VG-10 knife, same kind of san-mai construction as Shun's Classic line.Can't say enough good about these knives.
