how thick is the binder? do you know if the rings are 19mm or 30mm?

It looks to me like they are 19mm - actually my ruler shows 16mm on the inside of the ring, 18mm from the outside of the ring ... this is in height. Across the ring (width), its about 25mm on the outside of the ring. Hope this helps

Can it be refilled with any A5 papers, from other companies?

I have not refilled mine yet. The paper in mine has 6 holes. It is really nice does not zip around, it folds close. Leather is nice. I hope that helps you.

Can it fit paper 8.5 x 5.5?

It might be too long. The paper in mine is 8.25 x 5.5
