The word "kippered" refers to the way the beef is preserved. Most kippered beef is smoked and not as dry as as regular jerky. The slices are generally thicker and more moist than standard jerky.

Q: If the package has not been opened and is still vacuum sealed, how long does it stay good?

It is vacume sealed,so it will last till opened. I keep mine in the bottom of refrigerator after opening and vacume seal the rest.

Q: Can I 0pen and food saver the rest in smaller quantities for a later date without freezing ?

That's what I do. The bag lasts about a month broken down into about 20 smaller bags. I use the big bags, use the sealer strip to make 2 seals down the middle, cut it down the middle, then I get 2 decent size bags.
