Q: Can I use weber charcoal bins rather than kit chicken wire to hold coals/wood at bay? Need I use corn meal on stone?

Yes you can and it's very easy. I have a Weber Performer so I start the coals in the center with the gas start, push the charcoal bins to the back to form a semi circle, and then put new fresh coals on top of the lit coals. Tip - use lump wood charcoal.

Q: Would this work with a Weber Performer 22 delux charcoal grill?

Yes, that's the grill I have. You will have to push in the ring in a bit inside the grill where the grill lid holder nut sits but it's no big deal. Just makes the ring a bit more snug when on the grill.

Q: Do you keep the top vent of the grill's lid wide open during cooking or do you close it off to capture the smoke?

I would say closed. You want the hot air to leave the grill out the front opening so that the heat moves over the top of the pizza so the top gets properly cooked.

Q: Will this work on a 18" weber grill?

This will work on any standard 18" kettle grill.
