All the money goes towards the knife, not the name
Beautiful knife, incredibly sharp and durable. This is a definitely a chef's knife for someone who cooks like a real person. Incredibly sharp and durable, with an excellent balance and a nice grip for people with larger hands. Love that it comes in a 9" version since that size just seems right to me. Flies through vegetables, parts out chickens with gusto, and makes delicate slices of fish for sashimi. One of the best deals in chef's knives out there.

Beautiful balance, beautiful edge, works great for folks with big hands...
I bought this knife partially because it's what Sara Moulton used on her old PBS cooking show, but also because I heard about the Messermeister affiliation with cooking schools in the US. Simply put, the knife lives up to the hype. I purchased the 10" Meridian Elite Stealth model, and can attest that it was beautifully sharp out of the box. With regular steeling, this baby maintains an edge well. Despite the relative thickness of the spine, the 15-degree bevel slips smoothly through even the toughest chopping jobs, like the 4 lbs. of sweet potatoes that go into my kimche poutine, then gracefully transitions to slicing paper-thin onion for side-salads. The knife is big enough for the gnarliest tasks, but performs beautifully at detail work as well, like julienne, mincing garlic, or brunoise. Incidentally, since you're essentially wielding a short-sword, the top third of the knife is ACTUALLY LARGE ENOUGH to tackle any and all fine work. So, no need to be lazy with my tiny santoku anymore.I know I'm gushing already, but my favorite thing by far about this blade is the handle. I have huge hands, and my previous kitchen favorite, an old Wusthof Le Cordon Bleu 9" cook's knife, has an annoyingly small handle for its' size, as well as an awkwardly short bolster. My grip has always been choked on the knife, and despite loving its' other handling characteristics, it always bothers me when I'm using it for bigger jobs. This is not a problem for the Meridian Elite line. The handles are longer than the equivalent grips offered by Wusthof (even the Classics, which have different handles than the Le Cordon Bleu line), and this works extremely well for me. Furthermore, the balance is better than any other knife I've ever handled. It's located perfectly at the pinch point on the bolster. All this adds up to a knife with exceptionally forgiving handling, especially considering its' great size.In all, I cannot say enough good about my Messermeister. It has easily supplanted my old favorite in the kitchen, and is so big that when I have guests in the kitchen, they rarely want to use it (all the better... I don't know if I'd share well with this one).

Great knife. Likely perfect for you!
Really nice knife. The 10” is super well balanced and well weighted. I work in a kitchen and this knife is a good workhorse with both prep and line work. Takes an edge well. Keeps an edge well. I find myself doing a maintenance sharpening every week and a half or so with frequent honing. At a week and a half it’s still cutting a tomato with no problems though. I might just be a bit OCD about my edges.I wish the knife had a bit more belly to it but that’s something I’ll get used to. I also rounded off the spine a bit near the handle as I found the sharp angle would hurt my claw hand about 30# into chopping onions.

A great knife
This has become my every day cooking knife. I own several high end chefs knives but this one is the one I use for most things, Sure I use my shuns for fish and pork but this one is for practically everything else. It is comfortable to use, is nicely durable(my uncle banged the tip when he was cutting a turkey but that was user error and it cleaned up. User tip don't be a dummy and cut turkey inside the roasting tray, metal doesn't get along with metal ya dummies!.) The scales look great and it has a nice weight to it.

Great knife!
Only 4 stars for durability since it's brand new and I don't know how it will go. I'm not a chef, rather just a home cook (and honestly not a great one), but I love this knife. Super sharp, perfect size and weighs just right. Glad I read a TV chef talking about how much she loves these.

9” “Stealth” knife feels like perfections!
The Messermeister Meridian Elité 9” Stealth knife 9” chef knife feels like an extension of my body. It’s sharp and holds it’s edge well, I only need to sharpen it about 2-3 times per year of home use. I use the honing steel on it nearly every time I use it though to keep it sharp for longer.I’ve owned the Meridian Elité for a few years now, my previous chef knife was also a Messermeister, a 10” Park Place. I bought that knife 15 years ago and used it through culinary school and several years working in restaurants, I still use it at home when I need a slightly bigger chef knife or for more abusive tasks. Anyway, my point is that these are quality knives and I wholeheartedly recommend them.

The only knife you need!
My wife and I cook nearly every night and having good tools is really important to us. I have several high end and hand made kitchen knives and this is always the one I reach for first. It isn’t the absolute sharpest but it’s far more durable than my Japanese stuff. And though it’s not the most beautiful it’s the most forgiving. It’s a wonderfully balanced knife and the shape and weight means that its up to every task I’ve put against it. While there may be more specialized options if you are only going to have one good knife in your kitchen this would be my vote.

If it is still 2021, don't plan on recieving the Kullenschliff!
These knives are top of line. However, when I ordered the Kullenschliff, I recieved the package right away. The box was labeled correctly, However, the knife inside was the smaller 10" Stealth. I requested a replacement right away, and received one right away - SAME PROBLEM - No Kullenschliff, just a Kullenschliff labeled box, with a Stealth knife inside.This tells me this is not a one-time mistake. I am going to try again, but do not expect different results. I went to check on their website, and it says they are out of these knives at this time,

good knife
Great steel....very comfortable...but the dummy delivery guys just left this expensive knife in the lobby without calling me....lucky it wasn't stolen....Amazon delivery continues to be problematic...

Nice, sharp knife
Nice, sharp knife. Sadly, the person I purchased if for doesn't understand what a good knife is and prefers serrated knives. That's okay, my partner likes to cook and enjoys the knife whenever we go visit as he often prepares the dinner.
