Great quality knife
I've worked many years as a professional chef and have tried alot of different knives. Nothing to me really stands up to shun. They are beautifully handcrafted pieces of art that are scalpel sharp. The handle is comfortable and can be used all day long for various cutting tasks. It holds its edge very well if you take care of it and hone it regularly. These can cost alot more than some other knives but in my opinion they are worth it. I've used the same 8 inch hollow ground shun for over 10 years and it's took a beating. I still use it every day. Shun also offers lifetime warranty on all products.

Love this knife.
It's a work of art that works for you in the kitchen. Very light for its size and strength. Arrived with a super edge, ready to go to work. The price is very fair for the quality. Japanese craftsmanship throughout, from the steel to the handle to the cladding.

Lord of the roast
I was tired of not having a good knife to cut large birds or beef roasts with. I don't use this knife a lot, but it was still a good investment. It cuts through meat beautifully. It is is nice and long so it has plenty of room to cut through capon, prime rib, and pork roast.The handle makes the knife comfortable to use. I clean the knife using a natural bristle brush and hot water. This knife is as to be expected, is super sharp, so keep away from kids and fools. There is a serving fork that goes with this, but unless you are using this kind of set up at least once a week, you can get away with buying a lower cost fork.

Worth the money
Got this for my boyfriend, who works in a really nice restaurant. He uses it pretty often and we haven’t noticed any chipping or scratches, although it does need sharpened very often so make sure to have a good sharpening block. I’m not much of a cook but when we’ve cooked together, cutting with this knife has felt very luxurious, better than any knife I’ve used. Was definitely worth the money and I plan on buying him more Shun products!

Amazing value and quality
While to a more novice cook might find the price excessive, odds are if you're looking at a knife like this you're less shocked by the price. But plain and simple, for the construction quality and design, this is actually a very good deal knife.Fanastically sharp, thin but not flexible blade, lovely shun handle (right handed shape for this line of shun blades, not impossible for a lefty to use but you should definitely be aware before purchasing).Use for thinly slicing ANYTHING, raw fish is my primary usage, wanted something with great quality but didn't need as much maintenance as a traditional sushi knife. If that's what you're looking for, this is the right knife.

Shun Japanese Quality, Western Style Slicer
This is the Shun Classic 9" Slicer. Shun makes high quality knives, but you pay for it. Although very popular as Japanese Kitchen knives, these are really western-styled to market to the US in my opinion. They are very sharp out of the box, The damascus construction is stunning looking, which accounts for a great part of their appeal. Four stars only because the premium price diminishes the value. There are great and better performing similar forged clad Japanese kitchen knives for under $100 if you look around and do some research.

Super sharp, so much better than an electric knife
I'm a big fan of Shun knives and own several other. You could get away slicing meat with a chef's knife, but the low profile and length on this make it much easier. The metal on these knives are brittle, so you need to take care to avoid hitting the fork. Also be sure to cut on wood or plastic only. If it's your first time with a high-quality knife -- these things are sharp, so be warned. Electric knives shred the meat and seem to make more juices fall out, not the case with a manual knife like this. Pick up a smooth honing steel if you don't already have one to keep the edge straight.
