Husband cannot tolerate wheat but, he can tolerate Spelt (apparently, ancient Roman wheat), which is available in supermarkets but all too often in a wholemeal format...too healthy for my man who craves a white slice of bread. And here it is, I make 3 loaves at a time with this fabulous flour, perfect rise, very tasty and then, I hide them because when we have guests they all ask to take a loaf home as it tastes so good.
