Can you adjust how long the light stays on?

Short answer is: No. Long answer: This light has a ~20-30 second default ON time after it is triggered by movement in front of the sensor. If the sensor subsequently/continually detects further movement, the light will remain ON for the duration of movement; after movement ceases the light will turn off after 20-30 seconds. There is no adjustment to the default time setting.

How sensitive is the sensor? does it detect all motion? will it be triggered by the motion of a flag on windy days?

The only way to really know is to get the light and put it to the test - I’d recommend testing this before you install screws/mounts, etc. ALSO - This sensor has a DAY mode and a NIGHT mode (exact names of these modes may differ in your included instructions - please double check). If you set the light to NIGHT mode then the light will only activate when motion is detected in the dark. On DAY mode, the light will be activated whenever motion is detected (both when the environment has ambient light/daylight AND ALSO while in darkness - any time motion is detected regardless of light conditions). Can i turn off the motion sensor? could i install a led smart bulb in the unit so i can control it with my phone?

In short, I believe the answer to both questions is NO. There are actually 80 small led's inside the unit so there is no socket for an LED bulb. There is a switch for it to turn on whenever motion is detected, not just in the dark, but I don't believe there is any way to turn off motion detection.
